Andouille: (AWN-DOO-EE) Our signature product, is a type of smoked sausage in which choice lean pork is cubed rather than ground, seasoned with a little more salt, red pepper, black pepper and garlic, then stuffed into a larger beef casing. It is then allowed to hang in the cooler over night to cure, then it is heavily smoked over aged pecan wood for a unique tasting, fully cooked sausage. It is excellent to use for seasoning gumbos, jambalayas, beans, and many other dishes.

Also available is Chicken Andouille – our same great recipe but made with chicken meat.

Smoked Sausage Smoked Sausage: Our own fresh sausage blend of ground pork seasoned with salt, red pepper, black pepper, and garlic then stuffed in the traditional pork casing, which is then smoked to fully cooked perfection over aged pecan wood. Great tasting as a snack; and excellent to cook with. Available in regular, hot, chicken, and beef varieties.

Smoked Sausage Snack Sticks: A mini version of our smoked sausage with a blend of sage to give it a unique snack taste.

Smoked Turkeys: Injected with our own Cajun blend and smoked to perfection. It is extremely moist and delicious. (We do recommend an additional hour of baking time to ensure proper and complete cooking through and through.) Order yours for the Holidays!

Smoked Turkey Legs, Wings, & Necks Smoked Turkey Necks: Pieces of turkey neck, seasoned with a blend of salt, red pepper, and black pepper then smoked. Excellent in Gumbo and crawfish boils.

Smoked Turkey Wings and Legs: Turkey wings and legs seasoned and smoked. Fully cooked, ready to eat, and great to cook with.
